Job Summary

The Food and Beverage Manager is responsible for the regular operations of all food outlets on the resort as well as the long term planning for financial success of its operations. The F and B Manager  will be responsible for the following outlets: Ray’s Restaurant, The Narrows Café, Onsite Catering Services, Dutch Oven Dinners, our outdoor Blue Belly Pizzeria,  and any other potential outlets as determined by the General Manager.

The purpose of the Food and Beverage Manager is to provide a centralized unit of command for the Food and Beverage department, and to direct all happenings within the department in a profitable and safe and efficient manner. An emphasis should be placed on consistent quality and a quick service dining experience.

What you’ll be doing

• Lead a team of all other staff by example of excellent service and quality
• Monitor closely percentages of food cost and labor cost relative to budgeted percentages
• Improve and maintain functional flow within the food and beverage operation to maintain quick service
• Review weekly the in house NPS guest surveys on how to improve the overall guest experience
• Ensure effective orientation and training for all new staff
• Inspects to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met in regards to equipment, staff procedures and facilities. These include temperature, and maintenance logs
• Approve menus proposed by the Executive Chef for all outlets and special events
• Ensures that all legal requirements are consistently adhered to including wage and hour and federal, state and/or local laws pertaining to alcoholic beverages and food safety and sanitation, as well as yearly audits from beverage control, health department, and all applicable food service licenses and permits
• Addresses member and guest complaints and advises the General Manager about appropriate corrective actions taken
• Ensures weekly food orders are submitted based on budget and guest projections for the week
• Responsible for the proper accounting and reconciliation of the Point of Sale systems and member revenues
• Maintains records of special events, house counts, food covers and daily business volumes
• Oversee all catering functions, including weddings and large group events
• Participates in weekly and monthly goal/financial meetings to evaluate financials with management

What you will need to be successful

• Humble attitude to help anywhere, Hungry enough to work hard to do your part and Smart ability to manage co worker and guest emotions to reach success
• Attentive to the details that need to be followed through with in a timely matter
• Passion for hospitality, excellent service, safety, and team success
• Should have 4+ years of Restaurant Management experience
• Preferred Bachelor’s degree in Hospitality related field – Culinary School of some form, or management
• Excellent customer service and interpersonal skills
• Extremely organized and capable of multi-tasking with attention to detail
• Excellent knowledge of Microsoft applications including word and excel
• Previous experience with POS systems
• Leadership and conflict resolution skills
• Physical stamina to be on their feet for long stretches of hours a day
• Excellent problem solving capabilities
• Servsafe Manager training with current food handlers and alcohol service licenses
• Knowledge of current food and beverage trends and food cost structure

• Base salary DOE 
• Bonus structure: Receive 3% of annual EBITDA
