Sweet Basil Inc Hiring for Chef De Partie at Vail, Colorado Full Time

This is a rare opportunity for an external candidate to enter Mountain Standard as the Chef de Partie. Mountain Standard is a high energy, modern mountain restaurant, located in the heart of Vail Village. We focus on ancient cooking techniques using live wood fire. Strong technique, seasonal ingredients, and our mountain environment all influence the cuisine at Mountain Standard.

In our system, the chef de partie equates to something like a lead cook or sous chef in training position. We are looking for highly skilled cook or chef who is ready to take the next step into management, while continuing to hone their leadership style and cooking abilities. The ideal candidate will be passionate, dedicated, organized and exhibit a “will to win”. Prior management experience and creative ability is a plus, but there will be plenty of opportunity to work on those skills.

The chef de partie position will include, but not limited to, the following traits and duties:
-Leadership of a service, working expeditor/middle station, ensuring all facets are up to established standards
-Contribute to menu development through recipe testing and creation
-Demonstrate the ability to work all stations within the kitchen at a high level of competency
-Participate in daily line-ups, manager meetings, and chef meetings
-Should be able to communicate clearly though established methods, such as email, group texts, and scheduling platforms
-Ability to make sound decisions in a high pressure environment
-Strong technical cooking abilities
-Desire and knowledge to train and mentor other cooks
-Establish and maintain good relationships with all employees, kitchen and front of house
