Island Inn Hiring for Baker at Maine Full Time

The Island Inn is an iconic seasonal hotel (established in 1907) and restaurant located 11 miles offshore of Mid-Coast Maine on beautiful Monhegan Island – an unspoiled nature lover’s paradise of woods, cliffs, and rocky shores, and a small community of lobstermen and working artists. Most of Monhegan Island is preserved as a conservation area with 12 miles of hiking trails around the highest headland cliffs on the East Coast and endless rocky coves.

The Island Inn has 32 guest rooms, and an artists’ residence (Zimmie’s).  In addition, the hotel operates an in-house 60 seat fine-dining restaurant and a free-standing café, the Barnacle. Our restaurant serves breakfast and dinner to very loyal hotel guests and the public, providing a unique take on coastal cuisine paired with a magical setting. We passionately utilize the bounty of the coastal terrain, as well as cultivate our own gardens and greenhouse with a variety of organic/heirloom produce and micro-greens. 
 

Our kitchen and restaurant staff is at the heart of our continuous effort to offer superlative food quality and the highest level of gracious and personal guest service.  We believe in treating each member of our staff with respect and kindness so that they can do the same for our guests, many of whom have been staying with us for decades.  As our Baker, you will be expected to collaborate with the kitchen and Barnacle staff and the owners to develop the seasonal selections and to maintain the highest product quality at all times.

BAKER JOB DESCRIPTION

We’re searching for a skilled, energetic, highly-motivated Baker, who thrives in a fast-paced, team-oriented environment.  This position is responsible for all baked goods for the Hotel restaurant (Breakfast Service), Café (The Barnacle), and special events.

These baked products include:

Dining Room

• Fresh-baked breakfast items, such as banana & blueberry loaf, mini-scones, etc.

The Barnacle

• Sweet and savory pastries (e.g. plain & filled croissants, scones, fruit hand pies etc.)
• Muffins
• Cookies
• Cupcakes
• Brownies

Baker Responsibilities

• Creating, improving and accurately documenting recipes, including the latest modifications and critical food safety information related to all common food allergens, including nut allergies that require specific breakdowns by type
• Measuring and combining ingredients and using mixers, blenders, proofers, convection ovens and other baking equipment as required
• Decorating finished products
• Testing ingredients and finished goods to ensure that they meet all safety and quality requirements, including all common food allergens
• Monitoring inventories of all baking ingredients and entering required quantities into the ordering system in a timely manner
• Cleaning and restocking the baker workstation, ensuring that all equipment and work surfaces are sanitized and prepared for the next shift.

Education: High School diploma or general education degree (GED).  Culinary training is highly desirable, but will strongly consider appropriate and varied experience as a substitute in all cases.

Baker Requirements

• Minimum of 2 years of experience in full-time production baking creating an appropriate variety of products.  In individual cases, a Bachelors Degree with a Baking concentration or Baking Associates Degree may be substituted for the full-time experience requirement.  It is strongly preferred that a degreed candidate also has had seasonal positions or part-time internships during his/her academic program.  
• Baked product experience should not be limited to just a single baking category such as bread.
• A creative spirit with a desire to try new items, improve existing products, while having the discipline to consistently follow recipes and procedures
• Strong communication skills, an openness to collaboration, the willingness to receive feedback without becoming defensive and the ability to provide feedback in a positive and professional manner
• Excellent understanding of, and experience in, various baking methods, standard equipment and procedures and the creative use of seasonal ingredients
• Ability to work early morning shifts 6 days a week (e.g. 5:30 am shift start)
• Ability to work independently and self-motivate, yet still work in a team-driven kitchen environment
• Must be able to commit to working the entire 2022 season – Tuesday, May 17, 2022, through Tuesday, October 11, 2021
