Dillon’s Small Batch Distillers is Looking For Assistant Distiller at Lincoln, ON Full Time

ing directly to the Head Distiller, the Assistant Distiller will support the creation of all new and existing products at Dillon’s. With oversight from the Head Distiller, the Assistant Distiller will execute distillations, steeping rations, blending and proofing calculations, filtration, label descriptions, and will support the tracking of yields, recoveries, mashes and distillations.

The Assistant Distiller will be able to gain full-production experience at the Distillery, including some time spent bottling.

The Assistant Distiller will be a full-time, hourly paid position. Evenings and some weekends are required.

What You’ll Do:

Distilling & Blending (40%)

• Execute Distillations and mashes
• Steeping rations
• Blending & proofing calculations
• Filtration
• Label descriptions
• Ensure cut-points are being adhered to
• Support the tracking of yields and recoveries
• Support the tracking of mashes and distillations
• Balance between R95 and whisky

Day to Day Operations (20%)

• Support cleaning & rearranging tanks, totes etc.
• Support the Head Distiller in projections for LCBO
• Support the management of the barrel aging portfolio

Bottling/Packaging (40%)

• Perform product change overs, packaging sanitation and equipment sanitation
• Track packaging materials for usage/loss rates and maintaining packaging logs
• Perform quality control checks and ensure product is in proper condition
• Ensure packaging machines are in running condition involving basic cleaning and maintenance, minor repairs, and troubleshooting
• large or complex problems to the Bottling and Packaging Supervisor

Other related duties as assigned

What You’ll Bring:

Qualifications, Education, & Experience

• Completion of a recognized Distilling Program or related, or Bachelor’s Degree in a science-related field preferred
• 2+ years in a food or beverage production environment preferred
• Experience in quality control programs
• Strong spirits acumen and understanding of the distillation process

Skills & Abilities

• Excellent time management and organizational skills from a planning perspective.
• Ability to multitask in a very busy environment, with different projects, stakeholders and timelines, often concurrently, while maintaining a positive attitude and outlook at all times.
• Strong planning and organization skills.
• Excellent oral and written communication skills
• Ability to work independently during evenings and some weekends
