The Lodge on Little St. Simons Island is an award winning ecolodge located on a 11,000 acre private island. Little St. Simons Island has its own organic garden providing seed to table ingredients for the Lodge which serves breakfast, lunch and dinner for up to 32 guests. We are currently hiring for a working Executive Chef who would live on the island in our staff housing, prepare creative and delicious meals from scratch and manage the Lodge’s culinary operation.

Responsibilities

• Manage all aspects of the food and beverage operation.
• Accountable for guest satisfaction by ensuring LSSI’s food quality and service standards are met.
• Prepare high quality, great tasting meals for up to 32 guests and 25 staff members.
• Create weekly menus with a focus on farm-to-table cuisine showcasing produce grown in the island’s organic garden as well as incorporating local produce and seafood as well as other Georgia products.
• Source and utilize locally grown or harvested ingredients as well as locally made products.
• Prepare menu items from scratch including soups, salads, sauces, marinades, entrees, and desserts.
• Ensure the kitchen, food shelves, reach-in coolers, freezers, walk-in coolers and freezers are maintained in a clean and orderly manner
• Ensure proper holding and rotating techniques for storage, taking necessary steps to avoid losing or wasting product
• Maintain LSSI standards for safety and sanitation while meeting local, state, and federal health and safety regulations
• Order and maintain proper inventory for all food and beverage products.
• Maintain budgeted food costs through responsible purchasing and portion control and monthly inventories.
• Manage kitchen and service including hiring, training, coaching, counseling and disciplinary action as necessary.
• Foster team work, safety and professionalism.
• Demonstrate exemplary work ethic, technique, and productivity as a team member, assisting others as necessary. Skills & Traits
• Even-tempered and flexible
• Knowledge of classical, regional, and seasonal cuisine, ingredients, and techniques
• Above- average knife skills as well as proficiency in varying cooking techniques, saucier and butchery
• Ability to identify stock, soup and sauce products by taste and appearance
• Ability to prepare meals to meet various dietary restrictions of guests and staff (i.e., vegetarian, vegan, lactose intolerant, food allergies, gluten-free, etc.)
• Excellent communication skills, both written and oral; ability to clearly and graciously present information in one-on-one and in group situations
• Ability to work with a variety of people and in cooperation with co-workers efficiently and effectively
• Flexibility to work weekends and holidays
• Ability to teach and mentor staff

Job Requirements

• Ability to live on the Island (We provide staff housing but are unable to accommodate pets and family other than spouse/significant other who is capable of living in a remote location)
• LSSI adheres to a drug-free workplace; must be able to successfully complete background check and pre-employment drug screen.
• High school diploma or equivalent
• Additional culinary training and degree preferred
• A minimum of 7 years of demonstrated relevant culinary qualification and scratch-cooking experience in a hotel, resort or quality restaurant
• Reports to the General Manager
• Works breakfast, lunch and dinner shifts.
